When I got married, my new mother in law gave me a little cookbook filled with recipes my husband has loved her to make over the years. This recipe is one of those that I have made now for the last 11+ years and we all love it.
Ingredients:
8 oz macaroni or small pasta, cooked al dente
2 Cups Cheddar or Colby Jack Cheese, shredded
1 Can Cream of Mushroom Soup
1/2 Cup Milk
2 T freshly minced yellow onion
1/2 t black pepper
1/2 t Paprika
Preparation:
Preheat oven to 325. Combine soup, milk, onion, pepper and paprika in a bowl. In a 2 qt baking dish, layer pasta, cheese and sauce to make about three layers and finish off with a little extra cheese on top. To make this step a little quicker, I will sometimes add the macaroni and most of the cheese to the sauce and pour it into the baking dish all at once, then sprinkle the remaining cheese on top. Bake for 20 minutes, uncovered, or until bubbly and cheese is melted on top.
Makes a great side dish!
