Grilled Cheese Muffins

This is another recipe I made this weekend. I sent two with tomato soup in my daughter's lunch box. She tried one last night and said they were really good. Super healthy, tasty, and easy!! Again, Recipe Zaar.

Grilled Cheese Muffins
8 large muffins
time to make 40 min 10 min prep

1/3 cup white flour
1/3 cup whole wheat flour
1/3 cup wheat germ
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon sea or kosher salt
1/4 cup grated Parmesan cheese
1 cup grated cheddar cheese (reserve 1/4 cup for tops)
2 large eggs
3 tablespoons brown sugar
1/4 cup canola oil
3/4 cup orange puree (pureed carrots and sweet potatoes - I used canned and mashed them)

1. Preheat oven to 350 and prepare your muffin tins (spray or liners)
2. In a mixing bowl, whisk together the white and wheat flour, wheat germ, baking powder, baking soda, and salt.
3. Add Parmesan cheese and 3/4 cup of the cheddar cheese and set aside.
4. In another bowl, combine eggs and sugar, then whisk in the oil and orange puree.
5. Fold the wet ingredients ingredients into the dry and mix until flour is just moistened.
6. Scoop the batter into muffin tins, filling just over the top. Sprinkle the tops evenly with the remaining 1/4 cup cheddar che3ese and bake for 25 minutes or until the tops are golden brown.
7. Serve muffins warm.
