The menu this week involved a few things I would normally cook in my oven. As someone who cooks very regularly, it has been a major stress having my oven break down on me. The Meat Loaf en Croute I cooked last weekend took nearly 3 and a half hours. My oven takes about 2 hours now to preheat to 350. When you come home from work around 6 p.m., even if I turned the oven on right then, it wouldn't be ready to cook anything in it until 8 p.m.!
So, thank goodness for barbecues! I've been known to cook on mine while completely snuggled up in coat, hat, scarf and gloves while snow is flying sideways. There is no season for barbecuing - it is a year round cooking method that should not be forgotten between Labor and Memorial Days.
This week, we have cooked our salmon, chicken, burgers, AND tater tots on the barbecue. I think anything can be cooked on a barbecue if prepared right. Even tater tots. We just wrapped them up in foil and cooked them at the same time as the burgers.
I do love barbecue cooking and encourage everyone to have a winter-time bbq to keep a bit of summer alive. However, I will say I am probably more excited about my new kitchen appliances arriving on Friday January 29th! New gas range, microwave, and fridge to match our already installed black dishwasher. I also bought a new under-the-cabinet t.v./dvd/radio flat screen for the kitchen, since I spend so much time in there! I love my kitchen now, but can't wait to have all the updates!! Yay!!
