Black Bean Soup

Ingredients:

2 Cans Black Beans
1/2 Sweet Yellow Onion, Chopped
2 to 3 Cloves of Garlic, Minced
1 to 2 Carrots, Peeled and diced
Olive Oil
Salt
Pepper
Chili Powder
Ground Cumin
(For Soup - Add 1 can diced tomatoes with juice)
(For "Salsa" - Add 1 to 2 Chopped tomatoes)
- Sour Cream, Tobasco, Diced Red Onion, Grated Cheese

Sautee onion, garlic, carrots, salt, pepper, chili powder, and ground cumin in olive oil. Add beans and tomatoes. Cover and cook 20 to 25 minutes. For the soup, top with sour cream, tobasco, diced red onion and or grated cheese and enjoy!
