The PBJ, French Toast, Pancake

I saw a version of this on the Food Network show "Diners, Drive-Ins, and Dives" and thought I would try it out on my little family of three. We liked them so much, now we're going to make them for the whole family (21 people) on the Big Family Vacation (yes, it's a "formal" event now).


The best part of this recipe is that each person can really personalize their own, so there are endless possibilities for variety.

First, the general idea is to make a peanut butter and jam sandwich, although you can make it with other things than jam, like jelly, bananas and or honey (or just peanut butter). Then, you dip the sandwich in a thickened pancake batter so it is completely covered on all exterior sides and the peanut butter and jam are in the middle. Throw your sandwich on a hot griddle or a panini press and cook until lightly golden, like a pancake. You need no butter or syrup for these creations. The peanut butter is now warm and gooey. If you wait a few minutes to serve, the sandwiches can be eaten without a fork even, just like a regular sandwich.

The ingredients are completely up to you - however you normally make a PBJ. To make the thickened pancake batter, I use the Bisquick Low Fat/Low Cholesterol Mix and substitute an extra egg for about 1/4 cup of the suggested milk. I also use a panini press rather than a flat griddle, which adds even more excitement to the fun little sandwiches, and cooks both sides at the same time.
