Apple Cinnamon Muffins

A recipe from Michelle Gisi, via a recipe exchange. I just got the e-mail this morning; I can't wait to try them this weekend. Thanks, Michelle!

Ingredients:

  • 1 egg
  • 2 cups Bisquick baking mix
  • 3/4 cup apple, peeled and finely chop
  • 1/3 cup sugar
  • 2/3 cup milk
  • 2 teaspoons vegetable oil
  • 2 teaspoons cinnamon
Preparation:

Preheat oven to 400 F. Grease bottom of 12 medium muffin cups.

Beat egg slightly, stir in remaining ingredients until just moistened. Divide batter evenly among cups.

Bake until golden brown, 15-17 minutes.

EDIT: Added a photo - before baking, obviously. I probably should have chopped the apple a bit finer...

Made them last night - they were super fast to put together and baking was quick as well. The Boy has eaten 3 already...

Look at you!! My batter would had been all over the muffin tin pan. I will definitely need to make these for Halle's lunch next week. I love the simplicity of muffins!!!
